Fish in Roasted Red Pepper Sauce
- 1/4 cup KRAFT Zesty Italian Dressing
- 1/2 cup sliced onions King Sooper's 1 lb For $0.99 thru 02/09
- 4 cod fillets (1 lb.) King Sooper's 1 lb For $7.99 thru 02/09
- 1/4 cup flour
- 2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed, softened
- 1/4 cup roasted red peppers
- 1/4 cup chicken broth
- 1 clove garlic
- 2 Tbsp. chopped cilantro
- Heat dressing in large skillet on medium-high heat.
- Add onions; cook and stir 3 to 5 min.
- or until crisp-tender.
- Coat fish with flour; add to skillet.
- Cook 5 to 7 min.
- on each side or until fish flakes easily with fork.
- Meanwhile, blend next 4 ingredients in blender until smooth; pour into medium saucepan.
- Bring to boil on medium-high heat; simmer on low heat 3 to 5 min.
- or until heated through, stirring frequently.
- Serve fish topped with sauce and cilantro.
