Red Lentil Soup

  1. Using a strainer place the lentils through running water until it runs clear.
  2. In a medium cooking pan, heat the oil with the red pepper flakes.
  3. Add the onions and let them sweat for 5 minutes.
  4. Next add the chopped carrots.
  5. Let them cook for another 5 mins.
  6. Next add the paprika and freshly cracked pepper.
  7. Stir a few times, then add the lemon juice.
  8. Once the lemon juice has been absorbed (It'll take just a few seconds.
  9. ), add the tomate pure or paste.
  10. Add salt.
  11. Next, throw in the lentils and the stock or water.
  12. Let it cook in medium heat till the lentils have cooked through and start to barely show.
  13. It may take 15-20 minutes.
  14. Turn the heat off.
  15. Let it cool for 5 minutes.
  16. Use a blender to have a smooth soup.
  17. Place desired amount in a serving bowl, drizzle some olive oil and enjoy!
