Diabetes-Friendly Pineapple Cilantro Popcicles
- 3 12 cups pineapple, diced (about 1/2 a whole pineapple)
- 12 cup cilantro leaf (or more)
- 12 lime, juice of
- Put pineapple, cilantro, and lime juice in blender and puree until smooth.
- Pour mixture into six 3-ounce ice-pop molds and add sticks.
- Freeze for 4 hours, or until frozen.
- Dip molds in tepid water to help remove the pops.
