Meatless Tamale Pie Recipe
- 1 lg. onion, finely minced
- 1/2 green pepper, finely minced
- 1/2 c. extra virgin olive oil
- 1 c. yellow cornmeal
- 2 c. lowfat milk
- 3 Large eggs, slightly beaten
- 1/2 tbsp. salt
- 2 c. ripe olives
- 1/2 c. grated cheese
- 1 can (1 lb.) kernel corn
- 1/2 teaspoon pepper
- 1 can #2 1/2 tomatoes (1 pound 12 ounce., 3 1/2 c.)
- 1 tbsp. Spanish pepper, smoothed with 1 tbsp. water
- Saute/fry onion and pepper in oil till onion is golden brown; add in tomatoes and simmer 20 min.
- Meanwhile, cook cornmeal in lowfat milk, according to mush directions.
- Beat Large eggs in large bowl; add in mush, corn and seasonings.
- Combine tomato and cornmeal mixtures and blend well.
- Stir in olives.
- Turn into greased casserole and top with grated cheese.
- Bake at 350 degrees for 1 hour or possibly till hard.
