Chocolate Marshmallow Cakelets
- 1/2 c. shortening
- 1 c. brown sugar, firmly packed
- 1 egg
- 1 3/4 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. cocoa
- 1/2 c. milk
- 1/2 c. walnuts
- 18 regular marshmallows, cut in halves
- 1 (6 oz.) pkg. semi-sweet chocolate bits
- 2 Tbsp. butter
- 1/2 tsp. cinnamon
- Beat shortening until light.
- Add brown sugar and beat until fluffy.
- Beat in egg to blend.
- Sift together flour, baking soda, salt and cocoa.
- Beat flour mixture alternately with milk into creamed mixture; stir in nuts.
- Drop rounded teaspoonful of dough 2 inches apart onto lightly greased baking sheet.
- Bake in moderate oven (350u0b0) for 12 to 15 minutes.
- Remove from oven and top with marshmallow halves.
- Set pan on rack until cookies are cool enough to handle.
- Melt chocolate chips with butter; stir in cinnamon.
- Holding cookies in hand, use a small spatula and swirl their tops with chocolate mixture to cover marshmallows; cool.
