Bean, Red Onion, and Parsley Salad
- 2 (14 1/2 ounce) cans cannellini beans, rinsed and drained
- 14 medium red onion, thinly sliced
- 12 cup fresh parsley leaves, packed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon red wine vinegar
- salt, to taste
- pepper, to taste
- Combine beans, onions, parsley, oil and vinegar.
- Season with salt and pepper.
