Southwest Chicken Casserole
- 2 cups chicken, cooked and chopped
- 2 cups rice, cooked and cooled
- 2 cups celery, chopped
- 4 tbsp. onion, chopped
- 2 cans cream of chicken soup
- 1 can water chestnuts, sliced
- 1-1/2 cup mayonnaise
- 1 pkg. Stove Top stuffing
- 3 oz. butter
- margarine, melted
- Mix together the first 7 ingredients.
- Place in a casserole pan.
- Top with dry Stove Top stuffing (discard seasoning packet).
- Drizzle butter over top and bake at 350F for 45 minutes.
