Fried Mac and Cheese Bites.....
- 12 oz about 4 cups (cooked) elbow macaroni
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 pinch of cayenne pepper
- 2 cup shredded cheddar
- 4 oz thinly sliced deli American cheese, cut into thin strips
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1 box (8 oz ) Italian panko bread crumbs
- 6 cup vegetable oil - for frying
- Bring a large pot of lightly salted water to a boil.
- Add macaroni and cook 7 min.
- Drain.
- Meanwhile, melt butter in a sausepan over medium heat.
- Whisk in flour .
- Cooking until bubbly.
- While whisking, add 1and 1/4 cups of milk.
- In a thin stream.
- Season with salt and pepper and cayenne.
- Bring to a simmer and cook 2 min.
- Remove from heat and mix in 1 cup of the cheddar and American cheese.
- Fold in macaroni in a large bowl.
- Let it cool slightly, then stir in mozzarella and remaing cheddar.
- Spread in a rimned sheet.
- Cover with plastic wrap and refrigerate over night.
- Use a scoop or a spoon about 1/4 cup of the mixture at a time.
- Shape intp 2-3" balls.
- Compressing slightly.
- Whisk eggs with remaining 1/4 cup milk.
- Dip balls in egg mixture , then coat in panko.
- Heat oil in a deep 4- qt.
- Pot to 360on a deep fry thermometer.
- Fry 6-7 mac and cheese bites at a time.
- Until golden Serve immediately...
