Fried Mac and Cheese Bites.....

  1. Bring a large pot of lightly salted water to a boil.
  2. Add macaroni and cook 7 min.
  3. Drain.
  4. Meanwhile, melt butter in a sausepan over medium heat.
  5. Whisk in flour .
  6. Cooking until bubbly.
  7. While whisking, add 1and 1/4 cups of milk.
  8. In a thin stream.
  9. Season with salt and pepper and cayenne.
  10. Bring to a simmer and cook 2 min.
  11. Remove from heat and mix in 1 cup of the cheddar and American cheese.
  12. Fold in macaroni in a large bowl.
  13. Let it cool slightly, then stir in mozzarella and remaing cheddar.
  14. Spread in a rimned sheet.
  15. Cover with plastic wrap and refrigerate over night.
  16. Use a scoop or a spoon about 1/4 cup of the mixture at a time.
  17. Shape intp 2-3" balls.
  18. Compressing slightly.
  19. Whisk eggs with remaining 1/4 cup milk.
  20. Dip balls in egg mixture , then coat in panko.
  21. Heat oil in a deep 4- qt.
  22. Pot to 360on a deep fry thermometer.
  23. Fry 6-7 mac and cheese bites at a time.
  24. Until golden Serve immediately...
