Holiday Nut Rolls
- 1 cup milk, scalded
- 2 cups sugar
- 1 tablespoon salt
- butter
- 1 (25 ounce) package cake yeast
- 1 12 cups water, lukewarm
- 2 large eggs, separated
- 8 cups all-purpose flour, sifted
- 12 cup milk
- 1 lb nuts, ground (I use pecans)
- Combine scalded milk, 1 cup sugar, 1 Tbsp salt, and butter, stirring until dissolved.
- Cool to lukewarm.
- Crumble yeast in a separate bowl, add water, stirring until dissolved.
- Combine yeast and milk mixtures, add beaten egg yolks, stirring well.
- Add half the flour gradually, beat for about 10 min or until bubbly.
- Add remaining flour, knead until smooth, add flour if dough is sticky.
- Place in a greased bowl, turn dough over to grease, cover and let rise until doubled in bulk or for about 2 hours.
- Heat milk, nuts, remaining sugar and salt (to taste), until hot, then add egg whites and stir well.
- Let cool, then punch dough down, and cut off 3 inch round pieces.
- Roll each out onto a floured board to a 12 inch square.
- Dot with melted butter, and spread with a portion of the nut mixture.
- Roll up, and place on a greased baking sheet.
- Let rise until doubled in bulk, then bake at 350 degrees for 45 min to 1 hour.
