Chicken Enchilada Filling

  1. Boil chicken breasts for 15- 20 minutes until cooked thoroughly.
  2. Remove chicken from water and Shred.
  3. Heat oven to 350.
  4. Heat oil in large skillet over medium-high heat.
  5. Add chicken and brown slightly.
  6. Add taco seasoning and 1/3 cup of water.
  7. Stir until chicken is coated in seasoning.
  8. Add beans to chicken mixture and turn heat down to medium.
  9. Stir until thoroughly heated.
  10. Place 1/2 cup of filling into prepared tortilla and top with 1 tablespoon of cheese.
  11. Roll up and place in an 11" x 15" baking dish.
  12. Cover with enchilada sauce and cheese.
  13. Bake for 15 minutes.
