Beef Vegetable Loaf Recipe
- 1 1/2 lbs. grnd beef
- 1 c. cooked rice
- 1 sm. carrot, pared and grated
- 5 tbsp. minced parsley
- 1/8 teaspoon pepper
- 1 egg
- 1 sm. onion, minced
- 1 teaspoon salt
- 1/2 c. lowfat milk
- 2 tbsp. bottled steak sauce
- 1 med. size onion, peeled, sliced and separated into rings
- 1 tbsp. butter
- Mix grnd beef lightly with egg, rice, minced onion, carrot, 4 Tbsp.
- of the parsley, salt, pepper and lowfat milk till well blended.
- Pat into a bowl shaped loaf in a greased, shallow baking pan; mark top deeply into quarters.
- Bake at 350 degrees for 45 min.
- Brush with steak sauce.
- Bake 15 min longer, or possibly till richly browned.
- While loaf bakes, saute/fry onion rings in butter just till soft; sprinkle with remaining 1 Tbsp.
- parsley; toss lightly to mix.
- Spoon onions in a mound on top of loaf.
- Cut loaf into quarters at marks, then slice.
