Pork Sate With Peanut-Mirin Sauce
- 2 teaspoons lime rind, grated
- 2 tablespoons lime juice
- 1 tablespoon peanut butter
- 2 teaspoons sugar
- 2 teaspoons fish sauce
- 12 teaspoon curry powder
- 14 teaspoon salt
- 14 teaspoon ground coriander
- 2 garlic cloves, minced
- 1 lb pork tenderloin, trimmed and cut into 16 4-inch long strips
- 1 12 tablespoons sugar
- 1 tablespoon fresh cilantro, chopped
- 2 tablespoons rice wine vinegar
- 2 tablespoons lime juice
- 2 tablespoons mirin
- 1 teaspoon fish sauce
- 1 serrano chili, seeded and finely chopped
- 1 tablespoon dry roasted peanuts, chopped
- Prepare grill to med-high.
- To prepare pork, combine first 9 ingredients in a medium bowl, stirring til smooth.
- Add pork to bowl; toss well to coat.
- Let stand at room temp 15 minute.
- To prepare sauce, combine 1 1/2 T sugar and next 6 ingredients (through chile) stirring with a whisk.
- Stir in peanuts.
- Thread 2 pork pieces lengthwise onto each of 8 12" skewers.
- Place skewers on grill; grill 3 min on each side or til done.
- Serve with sauce.
