- 1 tbsp Olive oil
- 2 Onions, peeled and sliced
- 1 Garlic clove, peeled and sliced
- 1 tsp Fennel seeds
- 100 g (3.5oz) Fine green beans, trimmed
- 100 g (3.5oz) Cherry tomatoes
- 100 g (3.5oz) Grapes
- 2 tbsp Apple cider vinegar
- Preheat the oven to 200C/400F/Gas mark 6.
- Wash the unpeeled sweet potatoes and pat them dry.
- Arrange them on a baking tray and pierce each one several times with a fork.
- At the same time, prick all the sausages several times with a fork and arrange them on a wire rack set over a baking tray.
- Pop them in the oven with the sweet potatoes for 30-45 minutes until tender.
- Meanwhile, heat the olive oil in a large frying pan set over a medium heat.
- Add the onions and cook, stirring occasionally, for about 6 minutes until starting to brown.
- Add the garlic, fennel seeds, green beans, tomatoes and grapes and cook for another 6-8 minutes, stirring often, until the grapes and tomatoes are starting to soften and caramelise.
- Pour over the vinegar and swirl it around the pan.
- Turn off the heat and wait for the sausages to finish cooking.
- Finally, when the sausages and sweet potatoes are done, transfer the sausages to the onion-and-grape mixture, stir and put over a medium heat for 2-3 minutes until everything is all sticky and delicious.
- Then, place a baked sweet potato on to each plate and cut it open.
- To serve, pile the sausage mixture next to the sweet potato.
