Ray's' Mexican Pepita Pasta
- 1 box pasta cooked as directed
- 1 can Black olives
- 1 can corn drained
- 3 tbsp cotija mexican cheese
- 1/3 cup parmesan cheese
- 1/2 bunch chopped cilantro
- 3 tbsp Sunflower or pumpkin kernels
- 1 tbsp tajin fruit seasoning
- 2 tbsp parsley flakes
- 1 bag of sun dried roasted tomatoes
- 1/2 jar El Territo restraunt Pepita dressing
- cook pasta as directed, drain add to bowl.Now drain corn & olives, add along with all other ingredients mix well and chill in fridge.
- Garnish with avocados.
- Pepita dressing is your choice how much you like.
- Enjoy
