Fresh Mozzarella Dessert Napoleon
- 3 each , 9" x 3"
- 8 Tbsp. sugar, divided
- 1 cup applesauce
- 1 cup POLLY-O Fresh Mozzarella Cheese, diced Ovoline or 1 lb. ball
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger, ground
- 1/2 cup mascarpone
- 1/2 cup PLANTERS Walnuts, chopped
- 2 cups whipped cream, lightly sweetened, divided
- 1 Tbsp. whipped cream, lightly sweetened
- 36 slices fresh figs, sliced
- 12 each mint sprigs
- Place puff pastry strips on a parchment-lined sheet pan.
- Dock well.
- Sprinkle each with 2 tablespoons sugar.
- Bake at 375F about 8 minutes or until golden brown and puffed.
- Let cool.
- Combine applesauce and mozzarella in a saute pan.
- Stir in cinnamon, ginger and remaining 2 tablespoons sugar.
- Cook and stir until mozzarella is completely melted and mixture is slightly thickened.
- Stir in mascarpone until completely melted and incorporated into mixture.
- Stir in walnuts.
- Let cool completely, uncovered in refrigerator.
- Fold in 1 cup whipped cream.
- Slice each baked puff pastry sheet in half horizontally, then cut across into 3 squares.
- Fill each bottom square with 1/3 cup of the apple/mozzarella filling.
- Top with 4 slices of fig.
- Place top square on top of figs.
- Garnish each square with 2 tablespoons whipped cream and 1 mint sprig.
- Yield: 9 Servings.
