Fresh Mozzarella Dessert Napoleon

  1. Place puff pastry strips on a parchment-lined sheet pan.
  2. Dock well.
  3. Sprinkle each with 2 tablespoons sugar.
  4. Bake at 375F about 8 minutes or until golden brown and puffed.
  5. Let cool.
  6. Combine applesauce and mozzarella in a saute pan.
  7. Stir in cinnamon, ginger and remaining 2 tablespoons sugar.
  8. Cook and stir until mozzarella is completely melted and mixture is slightly thickened.
  9. Stir in mascarpone until completely melted and incorporated into mixture.
  10. Stir in walnuts.
  11. Let cool completely, uncovered in refrigerator.
  12. Fold in 1 cup whipped cream.
  13. Slice each baked puff pastry sheet in half horizontally, then cut across into 3 squares.
  14. Fill each bottom square with 1/3 cup of the apple/mozzarella filling.
  15. Top with 4 slices of fig.
  16. Place top square on top of figs.
  17. Garnish each square with 2 tablespoons whipped cream and 1 mint sprig.
  18. Yield: 9 Servings.
