Basic Millet Recipe
- 1 c. Uncooked millet
- 2 c. Vegetable broth Salt Grnd black pepper
- Place millet in a large, heavy pot.
- Stirring frequently, toast over medium heat till golden brown.
- Add in broth and salt and pepper to taste.
- Bring to a boil, cover and reduce to a simmer.
- Cook about 20 min, till the liquid is absorbed.
- Remove from heat and let sit, covered, for 10 min.
- Fluff with a fork; adjust seasonings.
- Yield: 6 servings.
