Basic Millet Recipe

  1. Place millet in a large, heavy pot.
  2. Stirring frequently, toast over medium heat till golden brown.
  3. Add in broth and salt and pepper to taste.
  4. Bring to a boil, cover and reduce to a simmer.
  5. Cook about 20 min, till the liquid is absorbed.
  6. Remove from heat and let sit, covered, for 10 min.
  7. Fluff with a fork; adjust seasonings.
  8. Yield: 6 servings.
