Escabeche, Sweet and Sour
- 500 grams any salt water fish, regular in size for each person
- 1 bellpepper, red
- 1 carrot
- to taste salt
- Wash the fish, clean and scale.
- Sprinkle salt and set aside.
- Prepare the spices: Clean and cut.
- Set aside.
- Fry the fish and set aside.
- Drain the used cooking oil from frying.
- From the same pan used in frying saute onions, garlic, ginger, carrots and bell pepper.
- Add half a cup of water, salt, oyster sauce, soy sauce and vinegar.
- When it's about to boil add the fried fish and simmer for 3 minutes then serve.
