Strawberry x Mascarpone Mousse

  1. Add heavy cream, granulated sugar and condensed milk in a bowl and whisk until frothy.
  2. Chill in the fridge.
  3. Combine the mascarpone and strawberry sauce in a different bowl and whisk thoroughly.
  4. You could also use the hand mixer from Step 1.
  5. Soak gelatin in water to soften.
  6. Microwave 20 seconds at 500 W, then add to the mixture from Step 2.
  7. Work fast from here onward, otherwise it will start hardening.
  8. Pass through a sieve.
  9. This makes the texture really smooth.
  10. Mix into the bowl from Step 1.
  11. Mix softly with a rubber spatula.
  12. Add kirschwasser.
  13. Also add a modest amount of red food coloring if you wish.
  14. Pour into a container.
  15. Drop it softly onto your counter to flatten the surface.
  16. Chill in the fridge for 2 hours to harden, then serve.
