Strawberry x Mascarpone Mousse
- 150 grams Strawberry sauce
- 100 ml Heavy cream
- 100 grams Mascarpone
- 20 grams Granulated sugar
- 30 grams Condensed milk
- 1/2 tsp Kirschwasser
- 5 grams Gelatin
- 2 tbsp Water
- Add heavy cream, granulated sugar and condensed milk in a bowl and whisk until frothy.
- Chill in the fridge.
- Combine the mascarpone and strawberry sauce in a different bowl and whisk thoroughly.
- You could also use the hand mixer from Step 1.
- Soak gelatin in water to soften.
- Microwave 20 seconds at 500 W, then add to the mixture from Step 2.
- Work fast from here onward, otherwise it will start hardening.
- Pass through a sieve.
- This makes the texture really smooth.
- Mix into the bowl from Step 1.
- Mix softly with a rubber spatula.
- Add kirschwasser.
- Also add a modest amount of red food coloring if you wish.
- Pour into a container.
- Drop it softly onto your counter to flatten the surface.
- Chill in the fridge for 2 hours to harden, then serve.
