Seafood Bisque

  1. Cut white portion and 1 inch of light green portion of each leek into thin slices.
  2. Melt butter in large skillet on medium heat.
  3. Add leeks; cook and stir 5 min.
  4. or until crisp-tender.
  5. Stir in all remaining ingredients except VELVEETA.
  6. Bring to boil; cover.
  7. Simmer on low heat 15 min.
  8. or until potatoes are tender.
  9. Add VELVEETA; cook 5 min.
  10. or until VELVEETA is completely melted and mixture is well blended, stirring frequently.
