The Chewy Chocolate Chip Cookie
- 8 oz unsalted butter
- 12 oz bread flour
- 1 tsp kosher salt
- 1 tsp baking soda
- 2 oz granulated sugar
- 8 oz light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 tbsp whole milk
- 1 1/2 tsp vanilla extract
- 12 oz chocolate morsels
- melt butter in a 2quart sauce pan over low heat then set aside to cool slightly
- sift flour , salt, baking soda onto a paper plate
- pour butter into your stand mixer bowl, add the sugars and beat with a paddle attachment on medium for 2 mins
- meanwhile, whisk the whole egg, egg yolk, milk and vanilla extract in a measuring cup
- reduce speed, slowly add the egg mixture, mix for about 30 seconds
- using the paper plate as a slide, gradually add the dry ingredients, stopping to scrape the bowl down
- then drop the speed to 'stir' and add the chocolate chips
- chill the dough for 1 hour
- heat the oven to 375 and place the racks in the top third and bottom third of the oven
- scoop the dough into 1 1/2 ounce portions onto parchment paper lined half sheet pans , 6 on each
- bake two sheets at a time for 15 mins, rotating halfway through
- remove from oven and slide the paper with the cookies onto cooling racks let stand 5 mins
