Gingerbread Dough

  1. Sift 5 cups sifted flour with baking soda, salt, ground ginger, cinnamon, cloves, and cardamom.
  2. Beat 1 cup plus 2 tablespoons of butter in a large bown with mixer until creamy.
  3. Beat in 1 cup sugar until light and fluffy.
  4. Beat in molasses, and grated orange rind.
  5. Stir in flour mixture, 1/3 at a time, blending well to make a stiff dough.
  6. Chill several hours or overnight to firm.
  7. Bake 8 minutes at 375 degrees F.
