Smoked Sausage & Veggie Casserole
- 3 whole Medium Russet Potatoes
- 1 whole Vidalia Onion
- 1 whole Red Pepper
- 1 cup Baby Carrots
- 2 Tablespoons Olive Oil
- 1 clove Garlic, Minced
- 1 Tablespoon Seasoned Salt
- 1 teaspoon Italian Seasoning
- 1 Tablespoon Balsamic Vinegar
- 4 whole Andouille Sausages
- Chop potatoes, onion and red pepper into large bite size chunks.
- Combine all the veggies in a mixing bowl.
- Mix together the olive oil, garlic, salt, seasoning and vinegar.
- Pour over the veggies and toss to coat.
- Put veggies into a 9x9 baking dish and cover with foil.
- Bake for 1 hour at 350 degrees F. While the veggies are cooking, brown the sausages in a skillet.
- After the veggies have cooked, cut the sausages into bite size pieces and put on top of the veggies.
- Cover with foil and cook for an additional 15 minutes.
- To make this an even healthier dish, use smoked turkey sausage.
