Lime Rickey
- 2 cups sugar
- 1 cup fresh lime juice (about 10 limes)
- 8 cups club soda
- 1 cup gin (optional)
- Stir sugar and lime juice together in a small saucepan.
- Bring to a boil, reduce to a simmer and cook until sugar is fully dissolved and liquid is syrupy, about 2 minutes.
- Let cool to room temperature, 30 minutes.
- Combine syrup with club soda and gin (if using).
- Serve immediately over ice.
