Mushroom and Bacon Pie
- 3 rashers bacon, chopped Rite Aid 2 For $7.00 thru 02/06
- 8 button mushrooms
- 2 medium onions, chopped
- 900g minced beef Safeway 1 lb For $5.99 thru 02/09
- 1 tablespoon VEGEMITE
- 2 tablespoons LEA & PERRINS Worcestershire Sauce
- 2 carrots, roughly chopped Target 2 lb For $3.00 thru 02/06
- 2 tablespoons water
- 2 teaspoons dried basil leaves
- 2 tablespoons cornflour, combined with
- 2 tablespoons water, extra
- 1 sheet ready rolled puff pastry
- 1 egg yolk, lightly beaten
- Cook bacon, mushrooms and onions in a heavy based saucepan until onions are soft.
- Add beef and continue to stir until cooked.
- Stir in Vegemite*, Worcestershire sauce, carrots, water and basil.
- Bring to boil and simmer covered for 20 minutes.
- Stir in cornflour mixture, continue to stir over heat until mixture boils and thickens.
- Pour into a 23cm pie dish and top with pastry.
- Trim edges, brush with egg yolk and make two small slits in centre of pie.
- Decorate with pastry cut outs if desired.
- Place pie dish on an oven tray and bake at 200C for 10-15 minutes until lightly browned.
- Serve hot with tomato sauce or cold left-overs, for a delicious lunch or snack.
