Key Lime Pie

  1. Short Dough:.
  2. Cream butter.
  3. Add sugar, honey, and salt until uniform.
  4. Add eggs one at a time until completely mixed.
  5. Add the flour -- Do NOT over mix.
  6. Roll out and then chill 3-4 hours covered.
  7. Make sure it is chilled so it is easy to handle.
  8. Bake dough at 350 for 15 minutes.
  9. Key lime filling:.
  10. Fold sweetened condensed milk, sour cream, key lime juice, lime zest, egg yolk, and honey.
  11. Pour filling into pre-baked crust.
  12. Bake for about 8 minutes.
  13. I like to top with a whipped cream and tuile cookie for decoration.
