Lemon Mocktail Parfait

  1. Stir 1 pkg.
  2. (85g) Jell-O Lemon Jelly Powder into 1 cup boiling water, until completely dissolved.
  3. Add 1 cup pineapple juice and pour into lightly greased 13 X 9 inch pan.
  4. Refrigerate for 4 hours or overnight until completely set.
  5. To SERVE, break jelly into small flakes with a fork, set aside.
  6. Fill each dessert dish with 1/4 cup drained pineapple tidbits, then pile flaked jelly onto fruit.
  7. Top with more fruit and Cool Whip Topping if desired.
