Lemon Mocktail Parfait
- 1 pkg. (85 g) Jell-O Lemon Jelly Powder
- 1 cup boiling water
- 1 cup pineapple juice
- 1 cup pineapple tidbits in juice, drained, divided
- Cool Whip Whipped Topping
- Stir 1 pkg.
- (85g) Jell-O Lemon Jelly Powder into 1 cup boiling water, until completely dissolved.
- Add 1 cup pineapple juice and pour into lightly greased 13 X 9 inch pan.
- Refrigerate for 4 hours or overnight until completely set.
- To SERVE, break jelly into small flakes with a fork, set aside.
- Fill each dessert dish with 1/4 cup drained pineapple tidbits, then pile flaked jelly onto fruit.
- Top with more fruit and Cool Whip Topping if desired.
