Crusted Baked Ham Recipe

  1. Place the ham in a deep nonaluminum pot or possibly casserole a bit wider than the ham.
  2. Pour in the cider and Calvados.
  3. Cover with plastic wrap and chill for 8 hrs or possibly overnight, turning the ham occasionally.
  4. Remove the ham from the refrigerator early sufficient to allow it to come to room temperature before cooking, about 2 hrs.
  5. Preheat the oven to 350 degrees.
  6. Remove the ham from the marinade and pat dry.
  7. Reserve the marinade.
  8. Spread the ham with 3 Tbsp.
  9. of the mustard.
  10. On a long sheet of waxed paper, mix together the bread crumbs and brown sugar.
  11. Roll the mustard-coated ham in this mix to coat proportionately.
  12. Put the ham in a roasting pan and bake till golden and heated through, about 1 hour.
  13. Let the ham rest for 15 min before serving.
  14. Meanwhile, in a small saucepan, boil the marinade over high heat till it is reduced to 1/2 c., about 20 min.
  15. Whisk in the remaining 1 Tbsp.
  16. mustard and the vinegar.
  17. Serve a small amount of this sauce with each serving of ham.
  18. Serves 6 to 8.
