Bloat Buster
- 1 tsp. vegetable oil
- 1 c. chopped onions
- 1/2 c. chopped celery
- 2 tsp. minced garlic
- 2 c. cooked white beans (cooked without salt)
- 1 c. finely diced butternut squash
- 1 c. chopped carrots
- 1 (13 3/4 or 14 1/2 oz.) can chicken broth
- 1 c. water
- 1 (2-inch) strip lemon peel
- 1/4 tsp. thyme
- 4 c. shredded cabbage
- 1 c. (14 or 16 oz.) whole reduced-sodium tomatoes
- 1 tsp. lemon juice
- 1/2 c. julienned basil
- 1 tsp. grated lemon peel
- Heat oil in saucepan over medium heat.
- Add onions and celery; cover and cook, stirring until tender, 5 minutes.
- Stir in garlic; cook 30 seconds.
- Add beans, squash, carrots, chicken broth, water, lemon peel, pepper and thyme.
- Bring to a boil; reduce heat and boil gently, uncovered, until vegetables are tender, 20 minutes.
