Baci Di Dama (Orange Almond Cookies)

  1. Put the ground almonds in a bowl with the sugar, orange peel and all but 1 tbsp of the flour.
  2. Mix well, then stir in enough milk to give a smooth, firm dough.
  3. Roll into small balls and place, well apart, on a baking sheet lined with greased wax paper.
  4. Sprinkle with the remaining flour, and bake in a preheated moderate oven 350F, for 15 minutes or until golden brown.
  5. Transfer to a wire rack to cool.
  6. When cold, sandwich the cookies together in pairs with the melted chocolate.
  7. Chill in the fridge for 1 hour before serving.
