Cheese and Bacon Biscuits
- Drizzle of EVOO
- 2 slices smoky bacon, finely chopped
- 1 small box of biscuit mix, such as Jiffy or measured mix for 8 drop biscuits * make to package directions
- 1 cup shredded sharp all natural yellow cheddar cheese
- 1/4 teaspoon nutmeg, freshly grated
- Preheat oven to package directions.
- Heat a small skillet over medium-high heat with a drizzle of oil, add bacon and cook 2 to 3 minutes to crisp.
- Place biscuit mix in bowl, add bacon and 1 tablespoon drippings, nutmeg.
- Continue to package directions and form biscuit dough, fold in half cheese, arrange drop biscuits on baking sheet and top with a sprinkle more cheese, bake 10 to 12 minutes to golden.
