Peas and Potatoes Masala

  1. Heat oil in heavy large skillet over medium heat.
  2. Add onion; saute until golden, about 6 minutes.
  3. Add tomatoes with their juices, potato, cumin and allspice.
  4. Cover; simmer until potato is just tender, stirring occasionally, about 8 minutes.
  5. Add tofu, peas and cilantro.
  6. Simmer uncovered until vegetables are tender, about 6 minutes.
  7. Season with salt and pepper.
