Summer Squash Casserole

  1. preheat oven to 350
  2. place sliced squash and onion in large sauce pan then fill with water.VERY IMPORTANT to do it this way as the squash floats in water
  3. boil until squash is tender, 10-15mins
  4. drain cooked squash, then place into large bowl
  5. mash cooked squash mixture with potato masher or back of large spoon
  6. now drain squash again, and place into a greased 9x13 cake pan
  7. in large bowl mix cream of celery and sour cream and a little salt and pepper
  8. then add dry stuffing, mix to combine
  9. place on top of squash mixture in pan
  10. sprinkle with cheese
  11. bake at 350 uncovered for 35-45 mins
