L.A. Caviar (Lower Alabama Caviar)
- 3 cans (15 Oz. Size) Plain Black-eyed Peas, Rinsed And Drained
- 1/4 cups Chopped Red Onion
- 1/4 cups Chopped Green Pepper
- 1/4 cups Chopped Yellow Pepper
- 1/4 cups Chopped Green Pepper
- 1/2 cups Halved Grape Tomatoes Or Quartered Cherry Tomatoes
- 1/4 cups Chopped Parsley
- 1/4 cups Balsamic Vinegar
- 1/4 cups Olive Oil
- 2 Tablespoons Sugar
- Salt And Pepper, to taste

- Combine peas, onion, peppers, tomatoes, parsley, vinegar, oil, and sugar.

- Season with salt and pepper.

- Marinate for 12-24 hours before serving.
- 4.
- Serve with tortilla chips.
