Wheat Germ Muffins With Blueberries
- 1 cup all-purpose flour
- 1 cup wheat germ
- 1 teaspoon baking soda
- 12 teaspoon baking powder
- 12 teaspoon salt
- 3 tablespoons chia seeds
- 3 ripe bananas, mashed
- 34 cup maple syrup
- 3 tablespoons applesauce
- 1 tablespoon vanilla extract
- 1 large egg
- 1 cup blueberries (enough to top each muffin)
- Preheat oven to 350F.
- Combine flour, wheat germ, baking powder, baking soda, salt and chia seeds in a bowl.
- Mash bananas in a separate bowl.
- Add maple syrup, applesauce, vanilla extract and egg.
- Blend.
- Fold in the dry ingredients in three stages until just combined.
- Divide into muffin tins and top each with blueberries, making sure to push berries inches Bake for about 15 minutes or until a toothpick comes out clean.
- Let cool and enjoy.
