Egg and Bacon Salad Pitas
- 3 slices bacon
- 12 cup mayonnaise
- 2 teaspoons Dijon mustard
- 6 hard-boiled eggs, peeled and chopped
- 12 basil leaves
- 1 medium tomatoes, chopped
- 1 medium cucumber, chopped
- 4 whole wheat pita bread, cut in half
- In large skillet over medium high heat, cook bacon.
- Drain and chop.
- In medium bowl, whisk together mayo and Dijon.
- Stir in eggs, bacon, basil, tomato and cucumber.
- Stuff pockets with egg mixture and serve.
