Sheila's Cabbage Soup
- 2 12-3 lbs beef shank
- 1 large onion, chopped
- 2 -3 tablespoons butter
- 1 bay leaf
- 1 tablespoon salt
- 14 teaspoon pepper
- 4 cups cabbage, shredded
- 1 12 cups leeks, chopped (white part only)
- 1 12 cups celery, diced
- 1 cup carrot, grated
- 10 cups water
- Simmer beef shanks in water (see note)with bay leaf, salt and pepper for 2 1/2 to 3 hours.
- At the same time brown onion in fry pan, then simmer along with meat.
- Add remaining ingredients and simmer 15-30 minutes longer.
