Almond Fried Chicken

  1. Preheat the oven to 350 F. Set up an assembly line to prepare the chicken for frying.
  2. Place, in order, a plate with the flour and salt, a wide bowl filled with the cream and eggs, and a plate of the almonds, breadcrumbs, and cayenne pepper.
  3. Coat each piece of chicken, one at a time, in the flour, egg, and breadcrumb mixtures.
  4. Set aside.
  5. In a wide, heavy skillet, heat the oil over high heat.
  6. When it is hot, add the chicken, two pieces at a time.
  7. Turn as each side browns.
  8. Remove to paper towels to drain off the excess oil.
  9. When all of the chicken has been fried, place in a baking pan and cook in the oven for 20 minutes.
