Almond Fried Chicken
- 1/3 cup flour
- 1/4 tsp. salt
- 3 tbsp. heavy cream
- 2 eggs, beaten
- 1 cup ground almonds
- 1 cup fresh breadcrumbs
- 1 tbsp. cayenne pepper
- 1 whole frying chicken, cut into eighths
- 1/2 cup corn oil
- Preheat the oven to 350 F. Set up an assembly line to prepare the chicken for frying.
- Place, in order, a plate with the flour and salt, a wide bowl filled with the cream and eggs, and a plate of the almonds, breadcrumbs, and cayenne pepper.
- Coat each piece of chicken, one at a time, in the flour, egg, and breadcrumb mixtures.
- Set aside.
- In a wide, heavy skillet, heat the oil over high heat.
- When it is hot, add the chicken, two pieces at a time.
- Turn as each side browns.
- Remove to paper towels to drain off the excess oil.
- When all of the chicken has been fried, place in a baking pan and cook in the oven for 20 minutes.
