Murray Silverman's Scotch Chicken
- 4 chicken breast halves (with rib meat)
- salt (optional)
- 4 tablespoons grated parmesan cheese
- 4 tablespoons grated sharp cheddar cheese
- 1 cup mayonnaise
- 3 teaspoons dry mustard
- 1 tablespoon fresh coarse ground black pepper
- 4 tablespoons Scotch whisky
- 1 handful ground walnuts
- Preheat oven to 425F.
- Place chicken in a greased baking dish.
- Sprinkle with a little salt if desired.
- Combine cheeses, mayonnaise, mustard and pepper.
- Spread mixture thickly over chicken.
- Sprinkle nuts over chicken.
- Cover and bake about 45 minutes, or until cooked through.
- Serve with pan juices and brown rice.
