Hearty French Onion Soup Recipe

  2. In a large, heavy saucepan heat butter over moderate heat; add in the onions and cook, uncovered, carefully stirring till golden brown--10 to 15 min.
  3. Blend in sugar and flour; cook, stirring, 3 min longer.

  5. Add in broth, thyme, bay leaf and pepper; raise heat to moderately high and bring to a boil, stirring constantly--about 6 min.
  6. Adjust heat so mix bubbles gently and simmer, partly covered, for 30 min.
  7. Remove and throw away bay leaf.

  9. Heat broiler.
  10. 4.
  11. Ladle soup into 4 flameproof bowls.
  12. Float 2 pcs of bread in each soup bowl.
