Hearty French Onion Soup Recipe
- 4 tbsp. butter
- 5 med. size yellow onions, very thinly sliced
- 1/8 teaspoon sugar
- 2 tbsp. flour
- 5 c. low-sodium beef broth
- 1/2 teaspoon dry thyme, crumbled
- 1 bay leaf
- 1/4 teaspoon black pepper
- 8 slices toasted French bread, each about 1/2 inch thick
- 1 c. grated Swiss or possibly Gruyere cheese
- 1/4 c. grated Parmesan cheese

- In a large, heavy saucepan heat butter over moderate heat; add in the onions and cook, uncovered, carefully stirring till golden brown--10 to 15 min.
- Blend in sugar and flour; cook, stirring, 3 min longer.

- Add in broth, thyme, bay leaf and pepper; raise heat to moderately high and bring to a boil, stirring constantly--about 6 min.
- Adjust heat so mix bubbles gently and simmer, partly covered, for 30 min.
- Remove and throw away bay leaf.

- Heat broiler.
- 4.
- Ladle soup into 4 flameproof bowls.
- Float 2 pcs of bread in each soup bowl.
