Tator Tot Enchilada Bake

• 2 lb ground beef
• 1 onion (chopped)
• 1 tbsp olive oil
• 1 can enchilada sauce
• 1 cup mexican blend shredded cheese
• 1 package taco seasoning
• 1 bag tator tots

1. Preheat oven to 350F
2. Add oil to skillet over medium heat.
3. Add onions & cook until tender.
4. Remove to bowl and set aside.
5. Add beef to skillet & cook until brown.
6. Add taco seasoning & mix in.
7. Remove from heat & drain.
8. Add onions to meat mixture.
9. Pour in enchilada sauce & mix.
10. Pour into 9x13 pan & scatter tator tots over top, sprinkle with cheese & black olives.
11. Bake uncovered for 15-20 minutes or until cheese is melted.
