Salmon Quesadillas

  1. In a skillet saute garlic in oil, stir in salmon, basil and pepper.
  2. Cook over medium heat until heated through then put in a bowl.
  3. spread butter over one side of each tortilla.
  4. Place tortillas, buttered side down, on skillet.
  5. sprinkle each with 1/2 cup cheese.
  6. Spread 1/2 cup of salmon mixture over half of each tortilla.
  7. Fold over and cook on low for 1-2 minutes on each side.
  8. cut into wedges and serve.
