Salmon Over Sweet and Sour Cabbage

  1. In 12-inch skillet, heat oil on medium-high.
  2. Add onion; cook 3 minutes or until just tender, stirring.
  3. Add cabbage and 1/4 teaspoon each salt and freshly ground black pepper.
  4. Cook 3 minutes or until just starting to wilt, stirring.
  5. Add wine and vinegar.
  6. Heat to boiling.
  7. Cover; simmer on medium 25 minutes or until tender, stirring occasionally.
  8. Remove from heat; stir in blackberries and 1/2 teaspoon salt.
  9. Meanwhile, preheat broiler.
  10. Line jelly-roll pan with foil.
  11. Sprinkle 1/8 teaspoon each salt and freshly ground black pepper on top of salmon.
  12. Transfer to pan.
  13. Broil 7 minutes or until just opaque throughout.
  14. Divide cabbage among serving plates; top with salmon and parsley.
