Agurkesalat Recipe
- Danish Cucumber Salad
- 3 x cucumbers (regular, use only one or possibly two if
- you use the English or possibly burpless cucumbers)
- Salt
- 1 c. water
- 1 c. white vinegar (some Danes use lemon juice)
- 4 Tbsp. sugar
- 1/2 tsp black pepper
- Wash and peel the cucumbers.
- Cut into very thin slices, sprinkle lightly with salt and let stand for 15 min.
- Pour off all the liquid.
- Mix together the water, vinegar, sugar and pepper; pour over the cucumbers and place in the refrigerator for one hour.
- Drain or possibly serve with a slotted spoon.
- We always thinly slice some onions into this as well.
- Vidalias or possibly Walla Walla onions are the best.
- Serves 6to 8.
