Green Lentil and Spinach Salad

  1. soak lentils for 1 hour and drain.
  2. Place in a pan and cover with water and bring to a boil.
  3. cover and simmer 1 hour or until tender.
  4. Drain well.
  5. Meanwhile, wash the spinach and cut into 1 inch strips.
  6. Cook in a covered saucepan over moderate heat for 5 minutes, or until just tender.
  7. Heat 2 tablespoons olive oil in a large frying pan and cook onion until softened.
  8. Stir in spinach and simmer 2 minutes.
  9. Transfer to a serving dish and add drained lentils.
  10. Make dressing with remaining olive oil, juice of 1 lemon, garlic, ginger and spices.
  11. Season with salt and pepper.
  12. Pour over lentils and spinach and toss well.
  13. Serve warm.
