Sunshine Pie
- 1 (15 ounce) candole mandarin oranges
- 1 graham cracker crust
- 1 banana, sliced
- 1 (6 ounce) package cream cheese, softened
- 1 teaspoon vanilla extract
- 1 (8 ounce) container Cool Whip, thawed
- 23 cup flaked coconut, toasted, divided
- Drain oranges; reserve 2 Tbsp syrup, Place half of oranges in bottom of crust.
- Top with half of banana slices; set aside.
- Beat cream cheese, reserved syrup, and vanilla until well blended.
- Gently stir in Cool Whip.
- Stir 1/3 cup coconut.
- Spread mixture over fruit in crust.
- Refrigerate at least 1 hour.
- Arrange remaining oranges and bananas over filling.
- Sprinkle remaining coconut flakes over top of pie.
