Citrus spice Smoked turkey
- 1 gallon Apple juice
- 1/2 gallon Orange juice
- 10 Cloves
- 1 tsp Nutmeg
- 1/4 cup Siracha Sauce
- 1 gallon Water
- 1 1/2 cup Kosher salt
- 3 cup Brown sugar
- 1 10-12 lb. Turkey skinned and gutted.
- 1 Apple wood smoke chips
- 1 Mesquite smoke chips
- Combine first part of brine in pot and simmer for 20 MIN.
- Boil 2nd part of brine untill disolved
- Combine both parts of brine and let cool.
- After cooled, submerge whole turkey and refrigerate for 24 HRS.
- Remove from brine and pat dry with paper towels.
- Smoke @ 250-275 degrees F., untill 180F.
- or juices run clear.
