Authentic Mofongo with avocado and mayo ketchup

  1. Peel your plantains and cut them into 1 inch pieces.
  2. Fry them on medium heat till they are cooked through and yellow.
  3. In your mortar add the garlic, salt pepper and olive oil.
  4. Start mashing all those ingredients together.
  5. Gradually start mashing the fried plantains with the mixture inside the mortar.
  6. Mash all the fried plantains and set it aside.
  7. Your mofongo is done!
  8. Now squeeze some ketchup and mayonnaise together to create a pink sauce.
  9. Cut open your avocado and add it on top of your served mofongo and drizzle the pink sauce on top.
  10. Enjoy :)
