Hearty Irish Lager Stew

  1. Heat 1/2 Tbs.
  2. oil in large pot over medium heat.
  3. Add mushrooms and garlic; saute 8 minutes, or until mushrooms are browned.
  4. Remove from pan.
  5. Add remaining 1/2 Tbs.
  6. oil to pot.
  7. Add leek, and cook 5 minutes.
  8. Add potatoes, carrots, parsnips, and tomato paste.
  9. Cook 2 minutes.
  10. Add tomatoes, broth, and thyme sprigs; bring to a boil.
  11. Reduce heat to medium-low, cover, and simmer 40 minutes, stirring occasionally.
  12. Add lager, tapioca, and mushrooms.
  13. Simmer 10 to 15 minutes, or until thickened, stirring often.
  14. Remove thyme sprigs, stir in cabbage and miso, and simmer 4 to 5 minutes, or until cabbage softens.
  15. Stir in chopped thyme and parsley, and season with salt and pepper, if desired.
