Power Cookies
- 1- 1/4 cup Almond Flour
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1 Egg
- 3 Tablespoons Coconut Oil
- 1/2 teaspoons Vanilla
- 2 teaspoons Chia Seeds
- 1/4 cups Semi-Sweet Chocolate Chips
- 1/4 cups Goji Berries
- Preheat your oven to 350 degrees F and lightly grease a baking sheet.
- In a large bowl mix flour, baking powder and salt together.
- In a smaller bowl, blend egg, coconut oil, vanilla and chia seeds.
- Fold the wet mixture into the dry mixture and continue to blend well.
- Add in chocolate chips and goji berries (and any other ingredient of your choosing) and mix until the batter is sticky.
- Gently spoon the batter onto the baking sheet and create small balls.
- Place baking sheet in the oven and bake for 15-20 minutes, or until lightly browned.
- Remove cookies from the oven and enjoy them in all their powerful goodness.
