Arros Con Pollo(Rice With Chicken)
- 2 chickens
- 3 c. white wine or beer
- 1 green pepper, chopped
- 1 to 2 bay leaves
- 2 cloves garlic
- 2 Tbsp. vinegar
- 1 can peas or frozen package
- 1 can asparagus
- 2 c. long grain rice
- 1 large onion, sliced
- 1/2 c. olive oil
- 1/2 tsp. cumin
- 2 tsp. salt to taste
- 1 can tomato sauce
- 1 can pimento with juice
- bijol or saffron to taste
- Brown the chicken, add onions, green pepper, bay leaf, garlic, salt, vinegar, tomato sauce, olive oil (unless used to brown chicken), cumin and some wine or beer.
- Cover to cook for 15 to 20 minutes on low heat.
- Add rice and bijol or saffron.
- Add rest of wine or beer, peas and asparagus.
- Cover and put in oven at 325u0b0 or finish cooking on top of the stove for 30 minutes.
- Check, if rice is not fully cooked, add more wine or beer until rice is tender.
